4 Creative Ideas for a Pudding Dessert

Whether you’re using a box of banana Jell-O filling for a cream pie or whipping up parfaits for dessert, the world of pudding includes much more than just the basic varieties of chocolate and vanilla. In the past, the most common way to prepare pudding was to mix ingredients with a grain product or other binding material (like flour, butter, eggs or cereal) to create a solid product. Nowadays, people boil, steam or bake creamy and thickened puddings from scratch.

A couple of ways to step outside of your pudding comfort zone include:

1) Fruit Bread Puddings

To create a new pudding, you may add tropical juices and other fruits to elevate the taste and texture of your recipes. For example, Fruity Bread Mango Pudding may contain Rubicon mango exotic juice drink paired with dried cranberries and mango.

2) Yam (or Sweet Potato) Pudding

Around the holidays, candied yams and sweet potato pie are popular desserts. You probably don’t think of yams and sweet potatoes as creating satisfying puddings, but these healthy starches offer quite a taste and consistency with common ingredients, such as butter, brown sugar, lemon juice, grated lemon peel, and slivered almonds.

3) Steamed Fruit Puddings

Boiling water is used as a method of preparing steamed puddings, where cranberries, plums and apples serve as common ingredients. Known as a popular sweet treat in England, Devon’s Georgie Porgies Puddings offers two tempting steamed fruit selections: Orange & Cointreau (an orange flavored triple sec liquor) and Cider & Apple (contains West Country cider and apples). For a holiday twist, use canned or fresh pumpkin puree to create a steamed pumpkin pudding, which tastes heavenly with a whipped cream or brandy sauce topping.

4) Latin American Rice Pudding

Take a page from Latin American and Caribbean cookbooks by preparing a rice pudding called “arroz con leche” (rice with milk). When preparing this sweet treat, the typical list of ingredients differ per country. In Chile and Mexico, the pudding contains raisins soaked in sherry wine or tequila. Colombians soak their raisins in red wine, rum or pisco – Peruvian liquor distilled from grapes. Anise seed adds a touch of licorice to the Cuban version of arroz con leche. In Peru, it is not uncommon to find shredded coconut or walnuts added to the pudding.

Sunflower Cupcakes

Need a little something sweet to brighten up your day? What better way to put a smile on any face than a batch of colourful sunflower cupcakes!

This original recipe comes from a one of a kind book entitled Hello, Cupcake written by Karen Tack and Alan Richardson and are guaranteed not to disappoint. First of all, they are cupcakes — cake you can eat on the go — brilliant!  Secondly, they are absolutely adorable and surprisingly simple to craft.

Here’s What You Need:

1 box of cupcake mix (flavour is entirely up to you; although vanilla is recommended)
2 cans of vanilla icing
Red M&Ms (that’s right, only the red ones, meaning the rest of the package is snacking material!)
Oreos
Green food dye
Yellow/Orange food dye
A little bit of chocolate icing

Decorating Method Part I:

Bake the cupcakes by following the instructions on the package. Try to use green cupcake skirts – more commonly known as cupcake liners – to continue the garden-like look.

  1. Spoon a chunk out of the top of each cupcake and place an oreo in the space.
  2. Add green food dye to one can of vanilla icing. Using a leaf icing tip, make a series of green leaves around the edge of the cupcake. (TIP: To make leaves, hold icing tube at 45 degree angle, start in the middle and as you squeeze move to the outside, rippling the icing as you go.)
  3. Next add yellow food dye to the remaining can of icing. Using a fresh icing tube, paint on two layers of yellow petals, using the same method you did for the leaves, only making the petals wider and more triangular.

Decorating Method Part II:

  1. Break out the third icing tube and introduce the chocolate! Put a tiny dollop of chocolate icing on the spot you want your ladybug to sit. Place a red M&M on top of the dollop, making sure the telling white ‘M’ logo is facing down.
  2. Carefully paint on spots and lines to make your ladybug come to life.
  3. Allow cupcakes to sit overnight, so that the icing well and truly sets, and enjoy the next day!

National Pie Day

The American Pie Council (APC) is excited to roll out National Pie Day this January 23.

International Sweet Treats: Greek Ice Cream

The modern form of ice cream is a relatively new concept, even though treats made out of ice have existed since ancient times. During the 5th century BC, the Greek markets of Athens offered a dessert that combined honey, fruit and snow. Over time, ice treats continued to grow in popularity. For example, the infamous conqueror Alexander the Great took pleasure in feasting upon snow ice mixed with honey and nectar. Today, the recipes of Greek ice cream have evolved to include more complex flavors and textures.

One of the most unique Greek ice cream selections I’ve come across is Pagoto Kaimaki, known for its distinct taste, which offers an almost crunchy texture due to using mastic-resin as an ingredient. With a strong, slightly smoky aroma, mastic resin comes from a tree and is typically added to chewing gum. Mastic is generally sold in drops of resin that requires a mortar and pestle to grind before using in ice cream. The addition of salepi (flour made out of grinded orchid plant parts) to Pagoto Kaimaki causes the ice cream to thicken and become more resistant to melting.

Other Greek ice cream creations include:

Olive Oil Ice Cream

Can you imagine what an ice cream tastes like that uses olive oil as an ingredient? From Greece and Italy to select restaurants in New York City, using a fruity olive oil to make frozen sweet treats is not unheard of. Common toppings for this kind of ice cream include flecks of sea salt, roasted apricots, sliced strawberries, bittersweet chocolate sauce or a balsamic chocolate sauce.

Pagpto Kataifi Chocolate

This ice cream involves a very fine, shredded phyllo dough pastry that looks like vermicelli or angel hair pasta.

Pagato Krema

To recreate a basic recipe for Greek vanilla ice cream, you will need 2 cups of full fat milk, 6 egg yolks, 1 cup of granulated sugar, 1 teaspoon of vanilla extract, and 1 ¼ cup of whipping cream (or double cream). Once made, you can dress up the ice cream with chocolate chips, cookie pieces, or strawberry sauce.

For the Love of Truffles

Any true chocoholic has spent a lot more time then they’d care to admit either pressing their noses against the front window of a chocolaterie, or drooling over a beautiful glass display case, housing the most beloved and cherished chocolaty treat of all time – truffles. 

Invented in 1625 by John Labarge, the humble chocolate truffle is traditionally a sphere like entity with a chocolate ganache center, encompassed by more chocolate and dusted with cocoa powder. However, history has seen several changes made to this cute confectionery – cream, nuts, liqueurs, berries, nougat, toffee, caramel, marshmallow, even wasabi has made its way into the recipes and hearts of chocolate lovers around the world. 

But one need not wander a chocolate shop dreamily, wishing for lots of money to throw down on a $4 or $5 taste of heaven. In fact, these delightful delicacies can be made right in the comfort of your own home at very little expense. 

THE BASIC TRUFFLE:

The trick is to begin with something simple, like a plain chocolate truffle, nothing fancy, but still sinfully good. Then later, once you have perfected your truffle technique, you can add different extracts and flavours to modify the original recipe. 

Ingredients:

- 12 ounces of chopped or broken bittersweet chocolate 
- 1/3 cup of cream (heavy cream is ideal, but ordinary cream will suffice) 
- 1 teaspoon vanilla extract

Method:

  1. Heat cream and chocolate together in a saucepan over a medium heat. Stir constantly until the chocolate is completely melted and the mixture luxuriously smooth.
  2. Remove from heat.
  3. Add vanilla extract and whisk, whisk, whisk!
  4. Pour into a new container or dish and leave to cool in refrigerator for approximately 1 hour, until sufficiently cooled, but not hard.
  5. Roll into balls and roll in the topping of your choice.
  6. (TIP: When rolling truffles, keep placing your hands on a package of crushed ice to keep your hands cool. This helps avoid melting the truffles into gooey messes.)

And there you have it – truffles galore right in your very own kitchen! Also, truffles make excellent gifts if packaged in tissue paper and presented in a pretty little box. Nothing says love quite like a homemade truffle (and nothing tastes quite as sweet either)!

Dessert Sushi

Sushi may not be for everyone, but dessert sushi most certainly is! These meticulous little bundles of sweetness can be made as a variety of shapes and sizes, with a variety of fun ingredients, to procure a variety of sensational mouth watering possibilities! Can you say ’something for everyone?’

The Sushi:

To begin with, you need a rice base – a little fluffy bed for the sushi topping of your choice to rest upon. You can be traditional and use actual boiled rice, adding a touch of honey or caramelized sugar to ensure it sticks together. If you want something a little bit different, however, you could use Rice Krispies. Simply follow any basic Rice Krispies Squares recipe, but instead of shaping into squares, mold into rectangular bases. You could even bake tiny white cakes if you wanted; angel food cake, straight up vanilla, cheesecake, pretty much any kind of cake would do!

Next, you need to decide on a topping. Swedish berry fish, real fruit slices, nuts, or any other kind of candy you can possibly think of! Chocolate is not out of bounds either.

To secure the topping of choice on top of the rice base, use a thinly sliced fruit roll-up and wrap around like an elastic band. This sweet variation couldn’t be easier!

The Sushi Rolls:

For something a little more complex and impressive, you may want to try your hand at creating a dessert sushi roll. Again, you will require sweetened rice, or a rice substitute. You will also need a sushi rolling mat, available at any sushi supply store.

HOW TO START:

  • Lay out the rolling mat on a flat surface and cover with cellophane.
  • Cover the entire sheet of cellophane with a generous layer of your chosen rice mixture.
  • Next, lay on top of the rice a square fruit roll up (preferably your favourite flavour!)
  • In the middle of the fruit roll-up, in a straight line, place the filling ingredients. These can be fruit slices, nuts, chocolate slivers, gummy worms, fuzzy peaches, taffy, basically anything sweet and delicious. Try different filling combinations to get some truly fantastic results!
  • Then, roll the sushi rolling mat (and thus, all the ingredients on top of it), making sure to squeeze as you roll to create a really tight and compact roll.
  • Slice the roll into manageable bit sized pieces, peel off the cellophane, place on a plate and serve.
