If you have Celiac Disease, gluten intolerance, or even gluten sensitivity then, eating desserts outside of your house can be a bit difficult. Well now, it is not as hard as it used to be because so many chain restaurants now have gluten free dessert options.

GLUTEN FREE CHAIN RESTAURANTS

Houlihan’s has three homemade, ice cream flavors. They are caramel macchiato, chick-o-stick, and raspberry. Plus, their crème brûlée has a rich vanilla bean custard that has caramelized sugar all over the top.

Outback‘s dessert is called Chocolate Thunder From Down Under. It is an extra generous pecan brownie that is crowned with rich vanilla ice cream and drizzled with their classic warm chocolate sauce. To finish it off, they add chocolate shavings and whipped cream. This is simply a chocolate lover’s dream.

Pizza Fusion has a fresh, delicious homemade brownie. That is not only gluten free, but is vegan as well.

Chili’s has a stupendously sweet ending with their chocolate milkshake. A great choice on a hot summer day.

Bertucci’s dessert is called Chocolate Budino. It is a rich, creamy, and bittersweet chocolate mousse that is topped off with a generous helping of whipped cream.

Lastly, Carrabba’s dessert is called John Dole. It is Blue Bell vanilla ice cream with caramel sauce and roasted cinnamon, rum pecans.

Show of hands: Who here likes Brownies? That many, huh?
Okay. Who likes the Brownies with all the extra goodies in them, like coconut and nuts and with gooey frosting on top?

And who likes to pay those huge bakery prices for a pan of special ‘gourmet’ brownies? Mm-hm, I thought not.

A friend sent me a recipe for an ‘upside down German Chocolate Cake’. It was okay. But I like brownies better, and I didn’|t care for the pecans she used. I made some changes, adjustments and this is the result.

Let’s make us some Inside Out Brownies!

You’ll need a 9X13 cake pan. I like to use disposable aluminum pans, basically because I hate cleaning them afterwards. Spray well with Pam or other baking spray and set aside.

Pre-heat the oven to 350 ° F

Prepare a brownie mix according to the package direction. Pour into the prepared pan and set aside.
In a microwave safe dish, place

  • 8 ounces of cream cheese
  • one stick of butter or margarine

Microwave for 30 seconds. Stir. Microwave another 30 seconds. Stir. When well blended, mix in

  • One pound powdered sugar
  • 8 ounces shredded sweetened coconut
  • one cup [or more] of chopped, salted, roasted cashews

Drop by spoonfuls onto the top of the brownie mix. Don’t stir it in, just arrange dollops all over the top.

Bake for about 40 minutes, or until done. I test for doneness when the sides start to pull away, and when the top is on the verge of cracking.

As much as you will be tempted, please let it cool fully, to room temperature, before turning it out or cutting a slice. The filling can be downright dangerous right out of the oven.

Turn out on a rack, cut into chunks, and be prepared to beat the diners away from it, because you’ll want to take it home with you. Or better yet, make two: one for home and one to take to the party.

Brownies are my favorite go-to last minute dessert. They’re easy, everyone likes them, and they are delicious. It’s hard to improve on the original warm, chewy goodness of a classic chocolate brownie, but this rocky road version can definitely compete. Marshmallows and chocolate chips are added to create a sinful treat. Serve them warm with vanilla ice cream and these rocky road brownies will become your go-to dessert favorite.

Ingredients

1 1/2 sticks butter. softened
1 1/2 c sugar
4 eggs
1 c flour
1/4 c cocoa powder
1/2 tsp baking powder
1/2 tsp salt
2 cups mini marshmallows
1 c chocolate chips

Directions

1. Preheat oven to 350F.

2. Combine butter and sugar, then beat in the eggs.

3. In a separate bowl, mix flour, cocoa powder, baking powder, and salt and slowly add to the butter mixture.

4. Fold in marshmallows and chocolate chips.

5. Spread in a 13×9 baking dish and bake for 35 – 40 minutes, or until the center is set.

6. Let cool before cutting into bars.
