Peanuts are a very versatile sweet treat that is naturally sugar free. Some spreads include Nature’s Promise, Skippy, and even Smuckers.

Then, you have the original, the traditional peanut butter and jelly sandwich(PB&J.) You even have peanut butter sauces to pour over your ice cream sundaes and it’s simply great with fruit like bananas and apples. There are even peanut butter cookies.

PEANUT BUTTER COOKIE RECIPE

To make this recipe you need a peanut butter spread and it can be any type you want, whether smooth or crunchy.

Then you need eggs, vanilla extract, and a sweetener such as sugar, honey, or agave syrup (this is very low on the glycemic index.) Of course, this is your choice.

Take one cup of peanut butter and mix in two eggs. Then, add in one tsp of vanilla extract and half a cup of sugar cane. Or if you prefer to use honey or agave, only use a quarter of a cup. Make sure that you mix every ingredient evenly. If necessary, you may add a splash of milk to moisten the mixture as you stir.

Then, you have to use your hands to shape the cookies. Take a scoop of the peanut butter dough approximately the size of two quarters. Roll it into a ball and slightly flatten it on a cookie sheet. Continue to repeat this process until, you have a total of eighteen cookies.

Preheat your oven to 350 degrees and bake for ten to twelve minutes. Then, you have sweet, crunchy cookies that are great for a “good old fashion dunkin.”

PEANUT BUTTER ALTERNATIVES

Of course, if you are allergic to peanuts you can revise this recipe. There are alternative spreads that can be used like cashew, almond, soy, and sunflower seed. ENJOY!

Fudge it!

Fudge. That very word has struck fear in my heart. Usually spoken late on a cold night, when the kids had been off from school because of snow, one of them would invariably ask for a ‘pot of fudge’.

Fudge at our house was rather involved. 3 cups of sugar, half a cup of cocoa, a tablespoon of white corn syrup and a cup of milk, cooked to soft ball stage, then beaten until I thought my arm would fall off [for some reason known only to my maternal grandmother, this step was only to be completed by hand, never with a mixer]. Then the whole mess was spread out on buttered wax paper, scored and you prayed to the Fudge Goddess that it didn’t set up grainy.

Now, there are all sorts of kits on the market for ‘home made fudge’. They’re not anywhere near like the real thing. I know. I’ve tried them.

There is hope, ladies and gentlemen. Chocolates will out, there is a new day dawning in the annals of fudgedom. And it is

GENIUS FUDGE

This is sort of complicated. So I’ll type slow:

1. In a large microwave safe dish, put 12 ounces of chocolate chips

2. Heat on high for one minute. Stir. Continue until all the chips are melted.

3. Into the melted chocolate, stir one can of prepared creamy style [not whipped] frosting of whatever flavor. Stir well

4. At this point, you can make any additions: a cup of peanut butter, some chopped nuts, dried fruit. Most anything.

5. Spread it out onto a buttered surface [don’t try the non-stick aluminum foil. It works for cakes, not candy] and score the top lightly with a knife before it sets up.

There. That’s it. Five minutes and you have a perfect batch of fudge.

I usually make two batches. One I use milk chocolate chips and caramel/coconut/pecan frosting, and the other dark or bittersweet chips, dark chocolate frosting and add a cup of soy-nut butter because I’m allergic to peanuts. It’s also excellent using butterscotch chips and vanilla frosting, with chopped cashews or crushed pretzels.

This is a recipe to have fun with, something you send to your kid’s school, but only you know how easy it was to make.

When you think about perfect dessert combinations, fewer things go together as perfectly as chocolate and peanut butter. The sweet, richness of the chocolate pairs perfectly with the smooth, savoriness of the creamy peanut butter. It is a dessert pair made in heaven and since its discovery as the perfect flavor combination, dessert recipes have never been the same.

This recipe is so wonderful because it is subtle enough to be mistaken for regular chocolate chip cookies, but has just a hint of peanut butter that makes you wonder how a chocolate chip cookie could be any more delicious. Use crunchy peanut butter to add more texture to this treat or use the creamy variety to make this cookie soft and chewy. This peanut butter chocolate chip cookie recipe is the perfect addition to your recipe collection as it perfectly embodies the perfect taste combination of chocolate and peanut butter. Ingredients
1 stick butter, softened
1/2 c peanut butter
1/2 c granulated sugar
1/2 c brown sugar, firmly packed
1 egg
1 1/4 c all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 c chocolate chips

Directions

1. Combine butter, peanut butter, and sugar.

2. Add the egg until well combined.

3. Blend the dry ingredients in separate bowl. Add to the creamed mixture. Add chocolate chips.

4. Drop cookie dough by spoonfuls on a greased cookie sheet. Bake at 375°F for 12 minutes.

I love a dessert that does double duty as a sweet treat and an energy food. Creating a cookie that is both decadent and hearty is not difficult. All you need is rich chocolate, some hearty oats, energy laden peanut butter along with some other ingredients and you have a delicious treat that you won’t feel guilty about eating on a walk or before a bike ride. Very few desserts can satisfy both your sweet tooth and fuel your body at the same time. But don’t be deceived, these cookies are not light. They are rich, dense and delightfully nourishing. In other words, if you eat more than a few and attempt that bike ride, you may regret it!

The yummy chocolate and oats are not the best part about this dessert. The best part is that these are no-bake cookies. They are boiled and spooned onto wax paper and cooled into cookies instead of baked in the oven like their traditional counterparts. Substitute crunchy peanut butter for a heartier dessert or stick with the smooth variety. Either way, this cookie is sure to please everyone.

Ingredients
1/2 cup milk
1 stick butter
1 3/4 cup sugar
4 tbsp unsweetened cocoa powder
1 tsp vanilla
1/2 cup peanut butter
3 cup quick oats

Directions

1. Combine milk, butter, sugar and cocoa in saucepan. Bring to a boil. Cook for a minute and a half.

2. Remove from heat and add vanilla, peanut butter and oats. Stir well.

3. Drop spoonfuls of mixture onto wax paper and cool.

4. Gently peel off of wax paper when cookies are completely cooled.
